New England Lobster Ravioli Salad
- 1 pkg. Monterey Gourmet Foods® Lobster Ravioli
- 1/2 cup Mayonnaise
- 1 tbsp. Apple Cider Vinegar
- 3 tbsp. fresh Lemon Juice
- 1 tsp. Celery Seed
- 1 tsp. Salt
- 1/4 tsp. Black Pepper
- 1/2 tsp. Sugar
- 1/2 cup Celery, Finely Chopped
- 1 cup Asparagus, Thinly Sliced, Blanched
- 1/4 cup Red Bell Pepper, Finely Chopped
- 1/2 cup Cucumber, Seeded, Thinly Sliced
- 1 package Monterey Gourmet Foods® Lobster Ravioli, Cooked
- 3/4 cup Dressing
For the Ravioli
- Cook ravioli as per package instructions. Cool on sheet tray and transfer to an airtight container. Reserve under refrigeration until assembly.
For the Dressing
- In a bowl, combine all the ingredients for the dressing and whisk well until thoroughly combined.
- In a mixing bowl, combine vegetables and ravioli. Add dressing and toss until vegetables and raviolis are evenly coated
- Serve chilled.
