Sausage & Kale Ravioli with Pumpkin Cream
- 1 pkg. Monterey Gourmet Foods® Sausage & Kale Ravioli
- 1 tbsp. Olive Oil
- 2 tbsp. Shallots, Minced
- 1 tsp. Garlic, Minced
- 1 tsp. Thyme, Fresh
- 1/2 tsp. Salt
- 1/2 cup Pumpkin Pureé
- 1/2 cup Chicken Stock
- 1/3 cup Cream
- 1/4 tsp. Black Pepper

- Cook Ravioli to package instructions and set aside.
- In a sauté pan, heat oil over medium heat. Add shallots and garlic until they begin to sweat. Sprinkle with thyme and half
of the salt.
- When shallots and garlic are translucent, add pumpkin and whisk in chicken stock. Cook for another 2–3 minutes.
- Reduce heat to low and whisk in cream, cook for another 1–2 minutes. Season with remaining salt and pepper.
- Plate ravioli and spoon sauce on top.
- Serve immediately.
