Spinach & Cheese Ravioli with Lemon Garlic Butter Sauce

Ingredients

  • 1 pkg Monterey Gourmet Foods Spinach & Cheese Ravioli
  • 1 tbsp Fresh Garlic, minced
  • 2 tbsp Sweet Onion, minced
  • 2 tbsp Fresh squeezed Lemon Juice
  • ½ cup White Wine
  • ½ stick (2 oz) Unsalted Butter, cubed & chilled
  • 1 tsp Lemon Zest, minced or fine grated
  • ¼ cup Heavy Cream
  • 1 pkg, 10 oz Fresh Spiralized Zucchini, Trader Joes
  • 1 pkg, 10 oz Fresh Spiralized Sweet Potato, Trader Joes
  • Sea Salt & Pepper to taste
  • 1 pkg, 8 oz Herbed Goat Cheese

Preparation

  1. In a small saucepan, add a small drop of olive oil and the minced garlic & onions. Cook on a low heat until soft. Then add the white wine, increase the heat to medium and let it cook for about 4 minutes until reduced by approximately 1/3. Take care not to burn or brown the garlic or onions as this will make the sauce taste bitter. Add the cream and lemon juice & zest. Cook until starts to bubble. Remove from heat, add the butter and stir until melted. Sea Salt & Pepper to taste and set aside.
  2. Boil 6 qts. salted water, cook MGF Spinach & Cheese Ravioli according to package directions. After removing pasta, use boiling water to blanch spiral veggies for 30 sec, remove, sea salt & pepper to taste.
  3. Toss Heated Ravioli with sauce, and plate on top of seasoned, blanched veggie spirals. Garnish with Goat Cheese. Serve & Enjoy
