Lobster Ravioli with Coconut Green Curry Sauce & Langostinos

Ingredients

  • 1 pkg Monterey Gourmet Foods Lobster Ravioli
  • 1 pkg Precooked IQF Langostino Tails, Trader Joes
  • 1 tbsp Vegetable oil
  • 2 tbsp Ginger puree
  • 1 tbsp Garlic, minced
  • ¼ cup Fresh Leeks, cleaned & julienne
  • ¼ cup White Wine
  • 1 tbsp Lime Juice
  • ¼ cup Mae Ploy Green Curry Paste
  • 1 can (14 oz) Coconut Cream
  • 1 bunch Fresh Scallions, cleaned & sliced on bias
  • Sea Salt & Pepper to taste

Preparation

  1. Heat in large sauté pan, oil, ginger, garlic & leeks for 1-2 min. Add white wine, lime juice, green curry paste and coconut cream, stir and heat until sauce reduces and starts to thicken. Add the Langostinos, sea salt & pepper to taste, remove from heat and set aside.
  2. Boil 6 qts. salted water, cook MGF Lobster Ravioli according to package directions.
  3. Add cooked pasta to the sauce in the sauté pan and toss. Plate & garnish with bias cut scallions
  4. Serve & Enjoy

  • Tip: You can also add chopped, roasted & unsalted cashews & chopped cilantro for more texture & flavor.
